Giveaway Wednesday: A cookbook for teens

My kids love homemade pizza - they are even willing to help roll the dough really thin the way they like it.

Our family loves to make homemade pizza together on Sunday nights. We (my husband, son and I) each get to pick our own organic pizza toppings, which find and buy at the downtown Farmer's Market. We've had some very creative pizzas in the past (taco pizza, heirloom tomato masterpiece, even scrapple pizza!) The only rule is that everyone has to try a bite of each pizza. And, we usually have left-overs for lunch on Monday!

To make the pizza dough (this is a thin and crisy crust - our favorite):

- Dissolve one package of yeast in one cup of luke-warm water and let stand
- Mix together 3 rounded cups of flour, 1 Tablespoon of olive oil, 1 Tablespoon of sugar, and 1 teaspoon of kosher salt
- Add the yeast mixture and knead until dough is thick
- Cover with damp towel and let stand in cool, dark place for at least two hours
- Punch down dough, divide into three equal parts (optional: let dough rise a second time)
- Roll out into three thin crusts, brush with olive oil and bake on a pizza stone at 400 degrees for 5 minutes
- Remove crust, build pizza and return to pizza stone for 10 - 15 minutes, depending on desired crispiness
- Enjoy!

Since my daughter has food allergies and my husband is a picky eater, one meal that makes everyone happy is Tacos. Sometimes we keep it simple (ground turkey, tomatos, lettuce, etc.), and other times we get creative with the toppings and ingredients (mango, avocado...chicken, pork, turkey...fish and shrimp are BIG hits). We generally serve them with rice and beans or just beans.

Wow, we usually enjoy pretzel sandwiches with roast beef, turkey breast and avocado. Yummy.

my kids love taco night! They make many toppings and each of my 5 kids can make the taco exactly the way they want it!

With children I like to cook the shortbread: the dough is not difficult to make and use the molds and then the decorations really like the little chefs!
