City That Breeds gave up the right way to do infused/spiced bourbon
http://citythatbreeds.com/2009/10/spiced-bourbon/
(be careful not to use too much clove)
I added pumpkin simple syrup (blend canned pumpkin with simple syrup) to make my version of a Headless Horseman.
I would say it works for fall and winter as a seasonal...Woodberry kitchen usually has awesome winter cocktails (one has 'drunken cranberries').

I had an awesome winter cocktail at Ze Mean Bean a few weeks back. It was served warm and had hints of orange, cranberry, cinnamon, and vodka of course. It was on the menu as a classic winter Polish cocktail. I don't remember the name and their website doesn't have their winter menu listed. I really enjoyed it though.

Hot Chocolate with either...
1. Van Gogh Dutch Caramel Vodka(can also add Frangelico or Amaretto to this too)
2. Blackberry Brandy
3. Grand Marnier
The Dutch Caramel Vodka works well in coffee or with Bailey's.
Enjoy!

hot toddy wins out for me.
put a tablespoon or two of honey at the bottom of a large mug. put 2 thin slices of lemon on top of the honey. place a teabag on the lemon slices, and weigh it down with a spoon. fill the mug 3/4 with water, and the last 1/4 with bourbon. let steep for 3-5 minutes. remove teabag, and lemon slices. stir and enjoy. i have about 3 of these every night when i have a cold and i sleep through the night.

During the winter I'm a fan of any "flip" variation. A few of my favorite recipes are:
-------------------------------------
1 oz. Mt. Gay Extra Old Rum
1 oz. Pedro ximinex PX sherry
.5 oz. Simple Syrup
2 oz. Cream/Milk
1 whole egg
-------------------------------------
1 oz. Rye Whiskey
1 oz. Allspice Dram
.5 oz simple syrup
2 oz. cream/Milk
1 whole egg
--------------------------------------
Shake the egg by itself first to really beat it. Add the rest of the ingredients and ice and shake vigorously. Pour into a frosted highball glass and top with shaved nutmeg. Delicious.

As a seasonal change, is there anywhere that serves a truly interesting and/or satisfying Hot Chocolate?

You can also try a Dark Continent if you are a coffee drinker(Amarula Cream and Coffee). Sam, you should email my buddy back, he'll send you some Amarula.
