I'm not a rabbi but I'm pretty sure roadkill isn't kosher.
But, is it safe?

Once I served as a judge for the Marlinton, West Virginia Roadkill Cook-off, and I'm still living.

A moose in Alaska - in January - whose death has been called in? (people can put their names on a waiting list for moose killed on the roads) Definitely.
Something that you just come across near Hereford during a drive on a balmy spring evening? Not so much.
Other than the ick factor, it's all about the timing and the temperature.

No body does road kill better than my restaurants @ $ 95.00 a plate.
