Timothy Dean comes clean, or his lawyer does anyway
We return, once again, to the subject of Timothy Dean, international restaurateur of mystery.
Faithful readers will recall that last month, Prime Steakhouse opened in the spot once occupied by TD Lounge and, before that, Timothy Dean Bistro. The news release trumpeting the opening stressed that Dean would serve as consultant to the restaurant, not chef, not owner.
But come to find out, Dean was listed as owner in city Liquor Board records. What gives?
Dean and his lawyer did not call me back the day I made that discovery, but I finally got Peter Prevas on the phone this afternoon. I asked: Who owns the joint?
"Timothy will be involved with his daughter," Prevas said.
UPDATE: Prevas told me Dean's daughter was the person I'd quoted in my original -- and please note, positive -- blog entry about the restaurant. The person I'd quoted was Tanay Medley. After a reader posted something saying that Medley wasn't Dean's daughter, I tried reaching Prevas, Dean and Medley this morning.
I just got off the phone with Medley, who said she is not Dean's daughter. She wasn't providing any other information. I apologize for the confusion.
Dean's daughter is Tanay Medley, who described herself to me last week as the restaurant's "office manager" and had this to say when I'd asked about ownership: "In all honesty, it's a group of investors. ... They remain blank faces so far."
Looks like Medley needs to get to know Dad and herself better if they're "blank faces" to her.
Dean and Medley his daughter are still working out the ownership arrangement, Prevas said.
"Basically they have an appointment to come in [to the Liquor Board] and do a new transfer application in which Timothy will be a licensee and his daughter will be an owner, I think perhaps the sole owner," Prevas said.
So why the misdirection last week?
Prevas responded with refreshing honesty. "I guess because they didn't talk to me first."

LV, is a blank expression legally the same as a blank face? If so, I may be one of the owners. I'll let you know if I hear anything.
Posted by: jl | March 1, 2010 7:47 PM
LV is probably struggling mightily to keep a straight face.

We need to leave this shady guy behind in favor of more promising news like The Chesapeake finally selling!
Posted by: Bob UU | March 1, 2010 11:16 PM
Shady or not, genius or not, bad business or not, Dean is a part (and a polarizing one at that, it seems) of Baltimore dining.
Other cities seem to live for the cult of chef celebrity - it's unfortunate that this is our shot at it.

The person who wrote this article is the most uninformed individual there could live in Baltimore's society. Had you taken the opportunity to visit the location, you would know better. And you wouldn't write such blatant lies. Tanay Medley is a wonderful and loyal employee of Timothy Dean, she has been recently promoted to take on the responsibilities of a general manager, and she is by no means his daughter.
The restaurant has taken a new fascade. Like many restaurants, TD Lounge was brave in reinventing their image in order to attract new cliental by creating great food. The restaurant industry, is a struggle, where only the best survive. The restaurants that are most capable to adapt, do.
Your story should have been the decline of decent restaurants in Baltimore. A sign of tough times, a reflection of the econonmy. Anything else... would have suffice.
Best,
Johnny
Peter Prevas, Timothy Dean's lawyer, told me she was his daughter. I that's not right, I'll gladly set the record straight. Check back here for an update. LV

Well, the identity of Tanay Medley should be a matter of fact, not opinion. Is she TD's daughter or not?
Posted by: Dahlink | March 2, 2010 6:49 AM
You folks are so funny always quick to judge. Always quick to insult. His food is great just pull up a chair and enjoy.
Posted by: Casey | March 2, 2010 7:47 AM
Still beating on Tim, he is a great chef, not shady. Just pull up a chair and enjoy the food, and stop hiding behind blogs people.
Posted by: Casey | March 2, 2010 7:51 AM
Laura Vozella you must be a freaking idiot. Tanay Medley IS NOT his daughter. She doesn't even have his last name. I would suggest you do your research before you go blabbing off at the mouth. Or should I forward this to Miss Medley herself so she can set the record straight?
Posted by: Toni | March 2, 2010 10:32 AM
And another thing Vozella -since you quoted Miss Medley in your first article, it's obvious you've spoken to her before. Why not call her directly and ask her instead of printing information you made up? If you are supposed to be "reporting" on the issue how can you report false information? So much for your credibility... It's shot!
I'm not sure Team TD should be questioning other people's credibility given the chef's statements about not owning a restaurant that he does, in fact, own. That said, I've put in calls this morning to Dean, Medley and attorney Peter Prevas to make sure there wasn't some sort of misunderstanding. Prevas told me yesterday that Dean will own the restaurant with his daughter. He said the daughter was the woman I quoted the other day in a blog item on the restaurant, and that was Medley. If Prevas though I'd quoted someone else, and Medley isn't Dean's daughter, I'd love to clear that up. LV

Quite a baptism of fire, eh, Ms. V? You seem to have upset some of Timothy Dean's friends, supporters and/or investors past the point of simple invective. What I find curious is that when I google Prime Steakhouse, Baltimore, I get the Prime Rib and Fletcher's. Unless I'm putting the name in incorrectly (which is always possible,) Dean's has to be the only steak joint in town without a web site.
Posted by: Michael A. Gray | March 2, 2010 10:53 AM
MAG, it appears that Mr. Dean's new venture will use primebaltimore.com as a domain name (that domain name was registered in February for the business, with one Chantel Dean as the contact), but the website isn't active yet.

O this is just Fun! Keep it up Dean crew. Your nasty comments are really helping!
Blank faces? As in they dont have any investors so far? I think Toni, Johnnyass(classy) and Casey are willing to put their faces in those spots!
Posted by: Anonymous | March 2, 2010 11:24 AM
Wow, Deans fans taking this pretty personally. Toni. my wife's last name is different than her fathers, is she not his daughter? Try to think things through before throwing around insults.

Shady indeed
Posted by: Dave the wave | March 2, 2010 12:21 PM
@ J - Obviously an unmarried woman carries her father's last name. Medley isn't married - hence the "Miss".
And your point is neither here nor there because like I mentioned before Medley is not Dean's daughter. Anyone who has frequented TD Lounge in the recent past would have met her and known that.
So Vozella was LOUD and WRONG anyway. She has since retracted those statements.
Maybe she should have never opened this can of worms in the first place. The damage is done and now she's stuck with egg on her face because she tried to play Super Sleuth.
She quoted an attorney who clearly gave her incorrect information. Whatever happened to attorney-client privilege? Why would Dean give the lawyer incorrect information and clearance to be quoted spewing said incorrect information to the newspaper? I wonder what else he was incorrect about or for that matter what else Vozella incorrectly reported. Since when do reporters not verify sources?
Vozella here's a tip - stick to writing about dining. Isn't the name of this blog Dining @ Large in the first place?

I am a lawyer toom and lots about this whole story says "shady". Wouldn't the interview subject and/or Dean have been the first to say, "We're not family!"? I know if I saw my name in an interview and it claimed someone was my father and he was not, I'd have burned up the phone lines to the Sun.
People can have all kinds of last names these days... especially if remarried or parents were never married.
When there is a history of closed restaurants, problems with liquor licenses, etc., that IS a dining story. Pure and simple. So, LV, you are on the right track.
Certainly, the shell game with the names, licenses, relations, etc., is suspect. Most folks applying have their names front and center and/or apparent corporations.
Don't blame the poor lawyer. Many clients play the shell game with their own counsel!

If these folks really want TD to succeed in this new venture, it might not be the best idea to go onto a Baltimore foodie blog full of potential diners and cast aspersions on anyone who dares question anything about TD. Seems like the big picture may have been missed by a few of these folks.
Also, if LV is too loud, you need to turn down the volume on your computer. I didn't hear a peep from her post.
Keep on digging, folks. I'm sure your comments are going to bring diners to the new restaurant in droves.

I see that Ms. Vozella has clarified the confusion after our phone conversation this morning.
I was awakened early this morning by friends forwarding me links to this blog post. I've been trying to stay out of this blog gossip but since my name has clearly been brought into play, I figured I'd respond.
For the record, I'm not Timothy Dean's daughter. I am not nor have ever been married and I have my married father's last name. Thank you.
All I do is answer the phones - hence my conversation with Ms. Vozella last week. How that went from two pleasant articles about the new restaurant to internet unknowns trying to verify my identity is beyond me. Goodness! I don't wish to have my personal business (which has nothing to do with Prime Steakhouse) mixed up in this blog banter. That will be all...

A few words from the Mr. Dean early on would have been refreshing and authoritative. I always appreciate when restaurant owners speak up for themselves. Alas ...

Yes, I agree Casey. After all, the handle "Casey" identifies you to everyone far more precisely than "anonymous."
Posted by: Huh? | March 3, 2010 8:08 AM
The comments are comical at this point. Reading the raving responses from the Dean supporters makes me want to stay far away from that place.
I've been to TD Bistro, I would agree that the food was really good, he's talented, but the service was horrible. I was at TD Lounge- the music was good, the employees were rude but the cover charges for Baltimore were ridiculous. And now, with all of this ranting and raving from his supporters and my past experiences, I think I'll just stick to one of the other 80 steakhouses that already are up in Baltimore. I think Dean seems like a great chef, but running restaurants and lounges doesn't seem to be working out for him.
I wish TD the best of luck because he's got an uphill battle ahead of him. I'm sure most would agree that I'd much prefer to go somewhere like Capital Grille where they are friendly and the service is wonderful and they seem happy to have my business.
Posted by: Kristen | March 3, 2010 8:21 AM
Kristen,
Lets be real here 80 steak restaurants in Baltimore. With regards to Deans staff I have supported him in this b- locations. And what he has done with food is amazing. His staff the times I have dined or just sat at the bar were more then professional. And Chef himself when in town always talk and thank every guest for coming out. Hell I have seen him bartend, cook and bus tables all in one night. I dont think you will see that at a chain restaurant. Please stay at capital grille!
Posted by: Marty | March 3, 2010 9:38 AM
Marty, if anything, Kristen gave a low number for Baltimore steak restaurants. A search of The Sun's restaurant database yielded 194 results for "steak" in the Baltimore area. City Paper's database lists 71 restaurants with a steak cuisine. There are probably a few more places that serve steak that aren't included in the CP or Sun databases.
Posted by: hmpstd | March 3, 2010 10:23 AM
So... this place is going to be gluten-free, right?
Posted by: sean | March 3, 2010 10:36 AM
One thing I've seen repeated a few times is that TD is a talented chef. I've never dined at one of his restaurants but I'm willing to give Prime a try if the food is good and the price is right.
It is tough not to be influenced by the seeming horde of people who've come away with poor opinions of the man and how he operates his business, especially when there's no response from the man himself. I'd love to hear from TD.
Posted by: Corey | March 3, 2010 11:15 AM
I haven't seen any explanation for the shady ownership of the new steak house from any of the TD supporters. All that leaves is speculation. Rather that an attempt at quelling the situation with any sort personal response by TD himself, all we have is a bunch of TD supporters who seem to be telling us that they do not want us as supporters or patrons. Well as long as TD has enough close friends to keep that place busy every night, i guess there is no problem with that. I haven't seen that work so well for him in the past though. Oh, and by the way, I'm anonymous because I don't feel like being personally insulted or called a racist for doubting TD's public relations skills.

TD's supporter(s) tell of his genius as a chef and awesome talent as a restaurateur. So, I ask, how does that figure into a place that he is neither running nor cooking in?
Does he sit on a throne and stroke a white cat, while sparks fly out of his cranium effusing staff and customers with joy, well-being, and happiness? Or does he ride his unicorn on a rainbow and sprinkle elf dust on the building? It certainly is a novel business model.
Posted by: Owl Meat Gravy | March 3, 2010 12:22 PM
I went to TD Bistro years ago, and they had the best elf dust EVER!!!! It was made from only the most exceptional elves, and was cooked to perfection!!!
Posted by: TheBeav | March 3, 2010 12:58 PM
Beav, after the Girl Scout cookie recall, I expect the availability of elf meat to skyrocket.

OMG: So, I ask, how does that figure into a place that he is neither running nor cooking in?
Well, how do other celebrity chefs pull it off?
Menu creation or consultation? Training the kitchen line? Slapping their name on a door and calling it a day?
It seems to take all kinds these days.
And, (admitting I've never eaten TD's food) is he sufficiently talented or in-demand to warrant any of these cook-by-wire options?
Posted by: Anonymous | March 3, 2010 7:23 PM

I didn't know this blog had so much interesting dialogue outside of food LOL. I am not particularly interested in the ownership of restaurants as long as the food and atmosphere is enjoyable. Why is the name on the license so important to readers now more than ever before?
I am glad it's no longer a lounge because I missed the restaurant and the food. I don't care if he is the owner or the consultant as long as he is the chef.

James A. Merritt, it was explicitly stated that TD would NOT be chef in the new venture.
But who knows WHAT we can believe in this case?
Posted by: Dahlink | March 4, 2010 6:38 AM
Bottom line, Timothy Dean Bistro became TD Lounge became Prime Steakhouse. Normally a name change follows a ownership change except in this case. Based on all the issues that has become associated with the Timothy Dean name, it would make sense for Dean to keep his name off everyones radar in order to give Prime Steakhouse a fair chance to succeed on its own merit.

i'd like to see a baltimore chef do well, but i don't think that TD is our shot....at least the Voltaggio's are from Maryland....

Perhaps the folks at top chef would like to know that Dean is not paying his staff. At least one manger has left over this and I know of at least one server that was not only stiffed on 3 weeks pay, but received none of thier hard earned tips.

ummm, how about i WORKED for him. and he writes everyone bad checks. the food is amazing. you cant tale that away from him. but his business skills are shady, and ruthless. he is a talker. he talks himself out of everything. he has an amazing lawyer that gets him out of stuff. however, he doesnt pay his employees. i cashed a payroll check he gave me, and now the company is threatening to sue me because he didnt have the funds to cover it. one check: ok. but 12? hmm, all the employees cant be lying on here. we would get tipped on credit cards, but would never see that money because he told us: "it gets put on your check". yea, ok. go to bank of america and try to cash a Timothy Dean check. He lies consistently. I found out the hard way: the only thing you should do at Prime is eat. & that's only if you dont have any morals in supporting a man that cons for a living. Bon Apetit.
