How I know I'm back in the land of the living
I was reading Robert Crais' latest, the First Rule, at lunchtime today. In it his action hero, Joe Pike, who's a vegetarian, made red beans and rice with grilled corn and eggplant for dinner.
Wow. That sounds fabulous. I haven't craved anything but Nina's spicy egg ramen soup for a week.
Now I just have to find a restaurant that serves grilled corn and eggplant.

Red beans and rice are "slack" food ( good, cheap, requiring minimal attention and good nutrition) I had black beans and rice for breakfast this morning. My only caveat on grilled corn is that it can't possibly be anywhere close to fresh-on-the-cob, and when recovering from being ill, the heartbreak of disappointment can cause a full on relapse.
However, eggplant rocks on the grill, or seared in the broiler. I either coat mine in a light sage/rosemary basil/ oil oil for crispy edges, or let it go plain, then top and bake pizza style.
prep time minimal, cook time several hours on black beans and rice, 20 minutes tops on eggplant treats.

Good point Meekrat about being careful what you eat when you are on the road to recovery.

My red beans and rice aren't even close to vegetarian. I toss in a meaty ham hock, some bacon, and a couple of sliced sausages (andouille is traditional, but I've used Mexican chorizo).

Not all tough guys eat meat.
One of the baddest-mother-for-yous ( and i am NOT talking about Shaft) i know went for three tours in Afghanistan, back as a contractor, hasn't has a bit of meat in 20 years; (and is barely 30) by choice. I know some serious rock-n-rollers that won't touch meat either, and several of whom are vegan. You would think Gene Simmons is Little Orphan Annie by way of comparison.

My stepfather, a former Marine, never ate meat again after doing a time-and-motion study in a chicken processing plant while working on his MBA...
