How to make crab enchiladas

Those of you who were horrified by Amanda Hasting's video illustrating the crab cooking technique of Therese Pearson of Pearson's Port will like this kinder, gentler video about how to make a West Coast favorite, crab enchiladas.

I don't know if you can appreciate how funny the whole retro Little Woman in the Kitchen thing is unless you know Amanda, but maybe you can tell just from how she looked in her Sugar Week video and Crab Week West Coast Style.

Elizabeth, so far Crab Week has been a blast and Amanda's videos have been a fine addition. I recommend her as the official video queen for the blog.

Can't wait to see what topic comes next.

Thanks! Amanda has been doing this just for the fun of it, and I'm deeply grateful to her, so I'm delighted at your kind words, and I know she will be. EL

Yum! I love things made with crab, but it is so expensive, I don't cook with it as much as I'd like.

I did steam crabs for the first time this weekend! Does that count?

The outtakes show how the crab meat was acquired.
The little nipper didn't give it up without a fight ... heh heh.

Nice video. Weird dress.

No celery salt was involved. Squirt some lime on the finished enchiladas, and I think I'd be severely tempted to overeat.

Are you kidding? I love the dress.

No, I'm serious, Kate. Sorry, but retro-50's print dresses make me want to run screaming from the patriarchy. Or the Stepford Wives.

I still have nightmares about "Leave it to Beaver."

Lissa said, I still have nightmares about "Leave it to Beaver."

I just heard yesterday or the day before that Jerry Mathers turned 60. That should make you feel better.

That's crazy, I heard he died in Vietnam.

RevEd -- death-in-Vietnam rumors also made the rounds about Tony Dow (Wally) and Ken Osmond (Eddie Haskell), but they and Jerry Mathers all turned up on Good Morning America last fall for a 50th anniversary reunion with Barbara Billingsley (clip here).

Speaking of which, Lissa -- Amanda still needs a pearl necklace to complete the June Cleaver look.

Rev Ed, Rev Ed, Rev Ed. Quit it! lol

Can we at least agree that Mikey died from eating Pop Rocks?

Rev Ed is out of the box again. Somebody catch him before he joins up with VoodooPork and the Swoosh Man...lol.

I only just got a a chance to watch this video. Another excellent job by Amanda!

Spicy! The radish is a great touch.
